  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Mix in the egg yolk. Gradually add the flour and salt, mixing until the dough comes together.
  3. Press the dough into the bottom and up the sides of a tart pan. Bake for 15 minutes, or until golden brown. Remove from the oven and let cool.
  4. In a saucepan, combine the orange zest, orange juice, sugar, eggs, heavy cream, and cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Remove from heat and let cool.
  5. Pour the orange cream filling into the cooled tart crust. Sprinkle with chopped pistachios.
  6. Refrigerate for at least 1 hour to set.
  7. Serve chilled and enjoy!
