Onion-stuffed flat bread, also known as ‘Pyazi ka Paratha’ in Indian cuisine, is a popular street food in North India.

  1. In a bowl, combine the all-purpose flour, yeast, sugar, salt, and water. Knead until a smooth dough forms. Let it rest for 10 minutes.
  2. Meanwhile, finely chop the onions, green chilies, and cilantro.
  3. Heat 1 tablespoon of ghee in a pan and sauté the chopped onions until golden brown.
  4. Add the green chilies and cilantro to the pan and cook for another minute. Remove from heat.
  5. Divide the dough into 4 equal portions. Roll out each portion into a circle.
  6. Place a spoonful of the onion mixture in the center of each circle and fold the edges to seal the filling.
  7. Heat a pan and cook the stuffed flat bread on both sides until golden brown, using the remaining ghee.
  8. Serve hot with chutney or yogurt.
