  1. Heat butter in a large pot over medium heat. Add sliced onions and cook until caramelized, stirring occasionally.
  2. Sprinkle flour over the onions and stir for a minute.
  3. Slowly pour in the beer while stirring continuously.
  4. Add vegetable broth, bay leaves, thyme, salt, and black pepper. Bring to a boil.
  5. Reduce heat and simmer for 30 minutes.
  6. Meanwhile, preheat the oven to 350°F (175°C).
  7. Place baguette slices on a baking sheet and toast in the oven until crispy.
  8. Remove the bay leaves from the soup and discard.
  9. Ladle the soup into oven-safe bowls, top each with a toasted baguette slice, and sprinkle with shredded Gruyere cheese.
  10. Place the bowls on a baking sheet and broil until the cheese is melted and bubbly.
  11. Let the soup cool for a few minutes before serving.
