Heat butter in a large pot over medium heat. Add sliced onions and cook until caramelized, stirring occasionally.

Sprinkle flour over the onions and stir for a minute.

Slowly pour in the beer while stirring continuously.

Add vegetable broth, bay leaves, thyme, salt, and black pepper. Bring to a boil.

Reduce heat and simmer for 30 minutes.

Meanwhile, preheat the oven to 350°F (175°C).

Place baguette slices on a baking sheet and toast in the oven until crispy.

Remove the bay leaves from the soup and discard.

Ladle the soup into oven-safe bowls, top each with a toasted baguette slice, and sprinkle with shredded Gruyere cheese.

Place the bowls on a baking sheet and broil until the cheese is melted and bubbly.

Let the soup cool for a few minutes before serving.
