Heat oil in a pot over medium heat. Add onions and cook until golden brown.

Add minced garlic and ginger. Cook for 1-2 minutes.

Add curry powder, turmeric powder, cumin powder, and red chili powder. Stir well.

Add canned tomatoes and water. Mix well and bring to a boil.

Add potatoes, carrots, cauliflower florets, and peas. Season with salt.

Cover and simmer for 20-25 minutes until the vegetables are tender.

Serve the curry over cooked rice.
