Preheat the oven to 375°F (190°C).

In a large bowl, combine the flour, baking powder, and salt.

In a separate bowl, whisk together the eggs, milk, and vegetable oil.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Fold in the cheddar cheese, cooked bacon, green onions, bell pepper, tomato, and spinach.

Divide the batter evenly among a greased muffin tin.

Bake for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Allow the muffins to cool for 5 minutes before removing from the tin.
