In a large bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs.

Gradually add water, tossing with a fork until dough forms a ball. Shape into a disk, cover and refrigerate for 30 minutes.

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a medium bowl, combine the olives, feta cheese, parsley, salt, and black pepper.

On a lightly floured surface, roll out the dough into a 1/8-inch thick circle. Cut out rounds using a cookie cutter or a glass.

Place a spoonful of the olive mixture onto each round. Fold the dough over the filling and press the edges to seal.

Transfer the pastries to the prepared baking sheet. Brush the tops with beaten egg.

Bake for 20-25 minutes, or until golden brown. Allow to cool for 10 minutes before serving.
