Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, and salt.

In a large bowl, cream together the butter and sugar until light and fluffy. Add the molasses, egg, and vanilla extract, and mix until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Roll the dough into 1-inch balls, then roll each ball in granulated sugar to coat.

Place the coated balls onto the prepared baking sheet, spacing them about 2 inches apart.

Bake for 8-10 minutes, or until the edges are set but the centers are still slightly soft.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
