Nutritious Spinach Cheesecake

Preheat the oven to 180°C (350°F).

In a pan, heat olive oil over medium heat and sauté the garlic until fragrant. Add spinach and cook until wilted. Remove from heat and let it cool.

In a bowl, mix cream cheese, sour cream, parmesan cheese, eggs, salt, and black pepper until well combined. Add the cooked spinach and mix again.

In a separate bowl, combine almond flour and melted butter. Press the mixture into the bottom of a greased springform pan to form the crust.

Pour the spinach and cheese mixture over the crust and spread it evenly.

Bake in the preheated oven for 40 minutes or until the edges are golden brown and the center is set.

Remove from the oven and let it cool for 10 minutes. Then refrigerate for at least 1 hour.

Before serving, garnish with walnuts and serve chilled.
