In a saucepan, heat the heavy cream, whole milk, and ground cardamom over medium heat until steaming.

In a separate bowl, whisk together the granulated sugar, egg yolks, and salt until well combined.

Slowly pour the steaming milk mixture into the egg mixture, whisking constantly.

Pour the mixture back into the saucepan and cook over low heat, stirring continuously, until the mixture thickens and coats the back of a spoon.

Remove from heat and stir in the vanilla extract.

Strain the mixture through a fine-mesh sieve into a bowl.

Cover with plastic wrap, pressing it directly onto the surface of the custard to prevent a skin from forming.

Refrigerate for at least 4 hours or overnight.

Once chilled, churn the custard in an ice cream maker according to the manufacturer's instructions.

Transfer the churned ice cream into a lidded container and freeze for at least 4 hours or until firm.
