  1. Preheat oven to 325°F (163°C).
  2. In a medium bowl, mix graham cracker crumbs, melted butter, and 1/4 cup of granulated sugar. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat cream cheese and remaining 3/4 cup of granulated sugar until smooth.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Pour the cream cheese mixture over the crust in the springform pan.
  6. Bake for 55-60 minutes or until the center is set.
  7. Turn off the oven and leave the cheesecake in the oven for 1 hour.
  8. Remove from the oven and let it cool completely.
  9. Refrigerate for at least 2 hours or overnight.
  10. Before serving, top with praline pecans and whipped cream.
