New Zealand Pavlova
Pavlova is named after the Russian ballet dancer Anna Pavlova, who visited both Australia and New Zealand in the 1920s.

Preheat the oven to 120°C (250°F) and line a baking tray with parchment paper.

In a large bowl, beat the egg whites until stiff peaks form.

Gradually add the caster sugar, one tablespoon at a time, while continuing to beat the mixture until it becomes thick and glossy.

Gently fold in the cornstarch and vinegar.

Spoon the mixture onto the prepared baking tray, shaping it into a round or oval shape.

Bake in the preheated oven for 1 hour and 30 minutes.

Turn off the oven and leave the pavlova to cool completely inside the oven.

Once cooled, carefully transfer the pavlova to a serving plate.

Top with whipped cream and fresh fruits.

Garnish with mint leaves.
