Cut the kabocha squash into chunks and steam until soft. Mash the steamed kabocha squash and set aside.

In a large mixing bowl, sift together the all-purpose flour and baking powder.

In a separate bowl, whisk together the egg yolks and sugar until pale and creamy.

Add the mashed kabocha squash, vegetable oil, milk, vanilla extract, and salt to the egg yolk mixture. Mix well.

Gradually add the flour mixture to the wet ingredients and mix until just combined.

In another clean mixing bowl, beat the egg whites until stiff peaks form.

Gently fold the egg whites into the batter using a rubber spatula.

Add the orange food coloring and fold until evenly distributed.

Pour the batter into the prepared chiffon cake pan and smooth the top.
