Neapolitan Cookies
Neapolitan cookies are inspired by the classic Neapolitan ice cream, which features three flavors: chocolate, strawberry, and vanilla.

In a bowl, cream together the butter and sugar until light and fluffy.

Add the egg and vanilla extract, and mix well.

Divide the dough into three equal parts.

To one part, add cocoa powder and mix until well combined.

To another part, add strawberry jam and red food coloring. Mix until well combined.

Leave the third part plain.

Roll out each dough into a rectangle and stack them on top of each other.

Roll up the stacked dough tightly and wrap in plastic wrap.

Chill in the refrigerator for 30 minutes.

Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

Slice the chilled dough into 1/4-inch thick slices and place them on the prepared baking sheet.

Bake for 10-12 minutes or until the edges are lightly golden.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
