  1. Preheat the oven to 180°C/350°F/Gas Mark
  2. In a large bowl, combine the plain flour, ground hazelnuts, caster sugar, and cocoa powder.
  3. Rub in the unsalted butter until the mixture resembles breadcrumbs.
  4. In a separate bowl, mix the egg yolks with the cold water.
  5. Add the egg mixture to the dry ingredients and mix until a dough forms.
  6. Press the dough into a tart tin and bake in the preheated oven for 15 minutes.
  7. Meanwhile, melt the dark chocolate in a heatproof bowl over simmering water.
  8. In a separate bowl, whip the double cream until soft peaks form.
  9. Fold the melted chocolate into the whipped cream.
  10. Once the tart base has cooled, spread the chocolate cream mixture over it.
  11. Top with roasted hazelnuts and dust with icing sugar.
  12. Chill in the fridge for at least 30 minutes before serving.
