In a large skillet, heat olive oil over medium heat. Add chopped onions and minced garlic, sauté until translucent.

Add sliced mushrooms and cook until they release their moisture and start to brown.

Add rice, vegetable broth, thyme, salt, and black pepper. Stir well and bring to a boil.

Transfer the mixture to a baking dish and cover with foil.

Bake in the preheated oven for 25 minutes.

Remove the foil, sprinkle grated Parmesan cheese on top, and bake for an additional 5 minutes until the cheese is melted and golden.
