  1. Rinse quinoa under running water. In a medium saucepan, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, and sauté until onion turns translucent.
  3. Add mushrooms and thyme to the skillet, and cook until mushrooms release their moisture and brown slightly.
  4. Stir in cooked quinoa, spinach, lemon juice, salt, and black pepper. Cook for an additional 2-3 minutes until spinach wilts.
  5. Remove from heat, cover, and let the pilaf rest for 5 minutes before serving.
