Preheat the oven to 180°C (350°F).

In a large frying pan, heat olive oil over medium heat.

Add sliced leeks and sauté until softened, about 5 minutes.

Add sliced mushrooms and cook until they release their moisture and become golden brown, about 8 minutes.

In a bowl, whisk together eggs, milk, salt, and black pepper.

Pour the egg mixture over the cooked vegetables in the frying pan.

Sprinkle grated cheese on top.

Transfer the frying pan to the preheated oven and bake for 15-20 minutes, or until the frittata is set and golden brown.

Remove from the oven and let it rest for 5 minutes.
