  2. Press the biscuit mixture into the base of a greased 9-inch springform pan to form the crust.
  3. In a mixing bowl, beat the cream cheese and caster sugar until smooth. Add sour cream, eggs, vanilla extract, lemon juice, and cornstarch. Mix well.
  4. Pour the cream cheese mixture over the biscuit crust in the springform pan.
  5. Bake in the preheated oven for 50-60 minutes or until the center is set.
  6. Turn off the oven and let the cheesecake rest inside for 2 hours.
  7. Remove from the oven and refrigerate for at least 4 hours or overnight.
  8. Serve chilled and enjoy!
