Mr. Stair
The name ‘Mr. Stair’ comes from the layered appearance of the dish, resembling a flight of stairs.
This is vegetarian, gluten free and high protein recipe. Dish can be prepared in 70 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 8.

Preheat the oven to 180°C.

Slice the eggplant into 1/2 inch thick rounds.

Brush both sides of the eggplant slices with olive oil and season with salt and pepper.

Place the eggplant slices on a baking sheet and bake for 15 minutes.

In the meantime, slice the tomatoes and mozzarella into 1/4 inch thick rounds.

Remove the eggplant from the oven and layer the tomato and mozzarella slices on top of each eggplant round.

Sprinkle with grated Parmesan cheese and torn basil leaves.

Return to the oven and bake for another 15-20 minutes, until the cheese is melted and bubbly.

Let it rest for 10 minutes before serving.

Garnish with fresh basil leaves and serve hot.
