Preheat the oven to 325°F (160°C).

In a bowl, mix the chestnut puree and heavy cream until well combined.

In a separate bowl, beat the egg whites until stiff peaks form. Gradually add the sugar and continue beating until glossy.

Gently fold the egg white mixture into the chestnut mixture.

Spoon the mixture onto a baking sheet lined with parchment paper, forming individual meringue nests.

Bake for 25-30 minutes, or until the meringues are crisp and dry.

Remove from the oven and let cool completely.

Meanwhile, melt the dark chocolate in a heatproof bowl set over a pan of simmering water.

Dip the marron glace into the melted chocolate, coating them completely. Place on a parchment-lined tray and refrigerate until the chocolate sets.

To assemble, place a meringue nest on a serving plate. Top with a scoop of chestnut ice cream and sprinkle with cocoa powder.
