Peach-Berry Rhubarb Slab Pie

Preheat the oven to 375°F (190°C).

Roll out the pie crust and press it into a 9x13-inch baking dish.

In a large bowl, combine the rhubarb, peaches, mixed berries, sugar, cornstarch, lemon juice, and vanilla extract. Mix well.

Pour the fruit mixture over the pie crust.

Roll out the remaining pie crust and cut it into strips. Arrange the strips in a lattice pattern on top of the fruit.

In a small bowl, beat the egg with water. Brush the egg wash over the lattice crust.

Bake for 45 minutes, or until the crust is golden brown and the filling is bubbling.

Remove from the oven and let it rest for 60 minutes before serving.
