Mom’s Zucchini Bake
Zucchini is technically a fruit, but it is commonly used as a vegetable in cooking.
This is vegetarian, gluten free, high protein and low carb recipe. Dish can be prepared in 70 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Preheat the oven to 375°F (190°C).

Slice the zucchini and onion into thin rounds. Mince the garlic.

In a large bowl, beat the eggs. Add breadcrumbs, Parmesan cheese, salt, and black pepper. Mix well.

Add the zucchini, onion, and garlic to the egg mixture. Stir until all the ingredients are well coated.

Grease a baking dish with olive oil. Pour the zucchini mixture into the dish and spread it evenly.

Sprinkle mozzarella cheese on top.

Bake for 40-45 minutes, or until the zucchini is tender and the cheese is golden brown.

Let it rest for 10 minutes before serving.
