Meringue pies became popular in America during the 19th century, and the addition of chocolate to the traditional meringue pie recipes created a delicious variation known as Mom’s Chocolate Meringue Pie.

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine the pie crust, cocoa powder, 1/4 cup of granulated sugar, cornstarch, and salt. Press the mixture into a 9-inch pie dish.
  3. In a saucepan, heat the milk over medium heat until steaming. In a separate bowl, whisk together the egg yolks, 1/2 cup of granulated sugar, and cornstarch. Slowly pour the hot milk into the egg mixture, whisking constantly. Return the mixture to the saucepan and cook over medium heat until thickened, about 5-7 minutes.
  4. Remove the saucepan from the heat and stir in the butter, vanilla extract, and chopped chocolate until smooth. Pour the chocolate filling into the pie crust.
  5. In a clean bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add in the remaining 1/2 cup of granulated sugar and continue to beat until stiff, glossy peaks form.
  6. Spoon the meringue over the chocolate filling, spreading it to the edges of the pie crust to seal. Create decorative peaks with the back of a spoon.
  7. Bake the pie in the preheated oven for 15-20 minutes, or until the meringue is golden brown. Remove from the oven and let it cool at room temperature for 1 hour. Then refrigerate for at least 2 hours before serving.
