Heat oil in a large pot over medium heat. Add onion, carrot, celery, and garlic. Cook until vegetables are tender.

Add vegetable broth, diced tomatoes, tomato paste, mixed vegetables, bay leaves, dried thyme, salt, and black pepper. Bring to a boil.
