  1. Preheat the oven to 375°F (190°C). In a large bowl, combine oats, flour, baking powder, baking soda, salt, cinnamon, and ground ginger. In a separate bowl, cream together butter and brown sugar. Add molasses, egg, and vanilla extract, and mix well. Gradually add the dry ingredients to the wet ingredients, alternating with milk. Stir until just combined. Fold in the chocolate chips. Spoon the batter into a greased muffin tin, filling each cup about 2/3 full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Enjoy!
