  1. Preheat the oven to 350°F (175°C). In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  2. In a large bowl, cream together the softened butter and 3/4 cup of granulated sugar until light and fluffy. Beat in the molasses and egg until well combined.
  3. Gradually add the dry ingredients to the wet ingredients, mixing well after each addition.
  4. Roll the dough into 1-inch balls, then roll each ball in the remaining 1/4 cup of granulated sugar to coat.
  5. Place the coated dough balls onto ungreased baking sheets, spacing them about 2 inches apart.
  6. Bake for 8-10 minutes, or until the edges are set and the tops are cracked.
  7. Remove from the oven and let the cookies cool on the baking sheets for 5 minutes.
