Cook the noodles according to package instructions. Drain and set aside.

Heat vegetable oil in a large skillet or wok over medium heat. Add garlic and ginger, and cook for 1 minute.

Add carrots, bell peppers, and cabbage. Stir-fry for 3-4 minutes until vegetables are tender-crisp.

In a small bowl, mix together soy sauce, oyster sauce, and sesame oil. Pour the sauce over the vegetables and stir to combine.

Add cooked noodles, green onions, and bean sprouts to the skillet. Toss everything together until well coated.

Season with salt and black pepper to taste.

Cook for an additional 2-3 minutes until heated through.

Remove from heat and let it rest for 5 minutes before serving.
