Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

In a separate large bowl, mix together the mashed bananas, sugar, melted butter, egg, instant coffee granules, and hot water until well combined.

Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.

Fold in the chocolate chips.

Divide the batter evenly among the muffin cups.

Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
