  2. Peel and slice the potatoes and carrots.
  3. Cut the broccoli and cauliflower into florets.
  4. Finely chop the onion and garlic cloves.
  5. Heat olive oil in a pan and sauté the onion and garlic until translucent.
  6. In a baking dish, layer the sliced potatoes, carrots, broccoli, cauliflower, sautéed onion and garlic.
  7. Season with salt and black pepper.
  8. Cover the baking dish with aluminum foil and bake for 30 minutes.
  9. Remove the foil, sprinkle grated cheddar cheese on top, and bake for an additional 10 minutes until the cheese is melted and golden.
  10. Let it rest for 10 minutes before serving.
