Preheat the oven to 425°F (220°C).

In a large bowl, combine the flour, sugar, baking powder, and salt.

Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

In a separate bowl, whisk together the egg, milk, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.

Roll out the dough to about 1/2-inch (3 cm) thickness.

Use a round biscuit cutter to cut out shortcakes and place them onto a baking sheet lined with parchment paper.

Bake for 12-15 minutes, or until golden brown.

Remove from the oven and let cool completely.

To assemble, slice the shortcakes in half horizontally.

Spoon a generous amount of mixed berries onto the bottom half of each shortcake.
