Preheat oven to 350°F (175°C). Grease and flour mini cupcake pans.

In a medium bowl, whisk together flour, baking powder, and salt.

In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla extract.

Gradually add the dry ingredients to the butter mixture, alternating with milk. Mix until just combined.

Spoon the batter into the prepared cupcake pans, filling each about 2/3 full.

Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.

Allow cupcakes to cool in the pans for 5 minutes, then transfer to a wire rack to cool completely.
