  2. Thaw the frozen spinach and squeeze out any excess water.
  3. In a bowl, whisk together the eggs, milk, salt, black pepper, and nutmeg.
  4. Dice the onion and mince the garlic.
  5. In a skillet, sauté the onion and garlic until softened.
  6. Add the spinach to the skillet and cook for another 2 minutes.
  7. Remove the skillet from heat and let it cool slightly.
  8. Roll out the pie crust and cut it into small circles to fit into a muffin tin.
  9. Press the pie crust circles into the muffin tin.
  10. Divide the spinach mixture evenly among the muffin cups.
  11. Pour the egg mixture over the spinach in each muffin cup.
  12. Sprinkle cheddar cheese on top of each quiche.
  13. Bake for 20-25 minutes, or until the quiches are set and the crust is golden.
  14. Let the quiches cool for 5 minutes before serving.
