  3. Break the graham crackers in half to form squares.
  4. Place the graham cracker squares on the baking sheet.
  5. Place a scoop of chocolate ice cream on top of one graham cracker square.
  6. Place a marshmallow on top of the ice cream.
  7. Top with another graham cracker square.
  8. Repeat for the remaining graham crackers, ice cream, and marshmallows.
  9. Bake in the preheated oven for 5 minutes, or until the marshmallows are golden brown.
  10. While the sandwiches are baking, prepare the chocolate ganache by melting the chocolate chips and butter in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  11. Stir in the heavy cream and vanilla extract until well combined.
  12. Remove the sandwiches from the oven and let them cool for 2 minutes.
  13. Drizzle the chocolate ganache over the sandwiches.
  14. Place the sandwiches in the freezer for at least 2 hours to firm up.
