Mini Provolone Popovers

Preheat the oven to 425°F (220°C). Grease a mini muffin tin.

In a bowl, whisk together the flour and salt. Stir in the shredded provolone cheese.

In a separate bowl, beat the eggs. Add the milk and melted butter, and mix well.

Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

Spoon the batter into the greased mini muffin tin, filling each cup about 3/4 full.

Bake for 15-20 minutes, or until the popovers are puffed and golden brown.

Remove from the oven and let them cool in the tin for 5 minutes.
