Mile-High Chocolate Cake
Ingredients
Instructions
-
Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
-
In a large mixing bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt.
-
In another mixing bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
-
Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Mix until just combined.
-
Stir in the boiling water until the batter is smooth. Divide the batter evenly among the prepared pans.
-
Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
-
Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.
-
In a small saucepan, heat the heavy cream until it begins to steam. Remove from heat and add the semi-sweet chocolate. Let it sit for a minute, then stir until smooth.
-
Place one cake layer on a serving plate and spread a layer of chocolate ganache on top. Repeat with the remaining layers.
-
Dust the top of the cake with powdered sugar and garnish with fresh berries.
-
Let the cake rest for at least 1 hour before serving to allow the flavors to meld together.
