Crush the digestive biscuits and mix with melted butter. Press the mixture into the base of a greased springform pan.

In a mixing bowl, beat the cream cheese, sugar, vanilla extract, and Baileys until smooth.

Add the eggs one at a time, beating well after each addition.

Pour the cream cheese mixture over the biscuit base and smooth the top.

Bake in a preheated oven at 160°C (320°F) for 40 minutes or until set.

Allow the cheesecake to cool in the oven with the door slightly open for 2 hours.

Chill the cheesecake in the refrigerator for at least 4 hours or overnight.

Serve topped with whipped cream and chocolate shavings.
