Mike Cookies – Great for Halloween
Mike Cookies are named after Mike Wazowski, the one-eyed monster from the movie ‘Monsters, Inc.’

Preheat the oven to 180°C.

In a mixing bowl, cream together the butter, granulated sugar, and brown sugar.

Add the egg and vanilla extract to the mixture and mix well.

In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients and mix until well combined.

Stir in the chocolate chips.

Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.

Press candy eyes onto the top of each cookie to create spooky eyes.

Bake for 10-12 minutes or until golden brown.

Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
