This is vegetarian and gluten free recipe. Dish can be prepared in 40 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

Peel and chop the potato, carrot, and onion into small pieces.

In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent.

Add the chopped potato, carrot, and broccoli to the pot. Stir well.

Pour in the vegetable stock and bring to a boil. Reduce the heat to low and simmer for 15 minutes, or until the vegetables are tender.

In a separate small saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.

Slowly pour in the milk while whisking continuously to avoid lumps. Cook for 2-3 minutes, or until the mixture thickens.

Add the milk mixture to the pot of vegetables and stir well to combine. Season with salt and pepper.

Cook for an additional 5 minutes, or until the soup is heated through.

Serve the soup hot, garnished with fresh parsley.
