Melting Cheesecake Pudding
Cheesecake is believed to have originated in ancient Greece and was served to athletes competing in the first Olympic Games.

Preheat the oven to 160°C (325°F).

Crush the digestive biscuits and mix with melted butter. Press the mixture into the base of a greased baking dish.

In a large bowl, beat the cream cheese and granulated sugar until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and lemon juice.

Pour the cream cheese mixture over the biscuit base. Bake in the preheated oven for 30 minutes or until set.

Remove from the oven and let it cool for 10 minutes. Then refrigerate for at least 2 hours.

In a separate bowl, whip the double cream until stiff peaks form.

Serve the cheesecake pudding with whipped cream and fresh strawberries. Dust with icing sugar before serving.
