  1. In a mixing bowl, cream together butter and granulated sugar until light and fluffy.
  2. Add the egg and vanilla extract, mix well.
  3. In a separate bowl, whisk together all-purpose flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
  6. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Roll out the chilled dough on a lightly floured surface to about 1/8 inch thickness.
  8. Use a round cookie cutter to cut out circles. Place half of the circles onto the prepared baking sheet.
  9. Spoon a small amount of jam or fruit preserves onto the center of each circle.
  10. Place another circle of dough on top of each filled circle and press the edges together to seal.
  11. Bake for 10-12 minutes or until the edges are lightly golden.
  12. Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  13. Once cooled, dust with powdered sugar. Enjoy!
