  2. Roll out the shortcrust pastry and line the tart tin, then blind bake for 10 minutes.
  3. In a saucepan, cook the rhubarb and caster sugar over medium heat until the rhubarb is soft and the sugar has dissolved.
  4. In a bowl, whisk together the eggs, double cream, and vanilla extract.
  5. Pour the egg mixture into the tart shell.
  6. Arrange the cooked rhubarb on top of the custard.
  7. Bake the tart for 30-35 minutes, until the custard is set.
