Ingredients
Instructions
-
Preheat the oven to 325°F (163°C).
-
In a saucepan, heat the cream, milk, and maple syrup over medium heat until hot but not boiling.
-
In a separate bowl, whisk together the egg yolks, vanilla extract, and salt.
-
Slowly pour the hot cream mixture into the egg yolk mixture, whisking constantly.
-
Strain the mixture through a fine-mesh sieve to remove any lumps.
-
Divide the mixture among four ramekins or small oven-safe dishes.
-
Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins.
-
Bake for 30-35 minutes, or until the custards are set but still slightly jiggly in the center.
-
Remove the ramekins from the water bath and let them cool to room temperature.
-
Once cooled, cover the ramekins with plastic wrap and refrigerate for at least 2 hours, or overnight.
-
While the custards are chilling, prepare the almond praline by toasting the almonds in a dry skillet over medium heat until golden brown.
-
Remove the almonds from the skillet and let them cool.
-
In the same skillet, melt the sugar over medium heat until it turns a deep amber color.
-
Remove the skillet from the heat and quickly stir in the toasted almonds.
-
Pour the almond praline onto a parchment-lined baking sheet and let it cool completely.
-
Once the custards are chilled and the praline is cooled, sprinkle the almond praline over the tops of the custards.
-
Serve and enjoy!
