  1. Preheat the oven to 180°C.
  2. Roll out the pastry dough and press it into a tart pan.
  3. In a saucepan, combine the sugar and cornstarch. Gradually stir in the lemon juice.
  4. Cook over medium heat, stirring constantly, until the mixture thickens and boils. Remove from heat.
  5. Beat the egg yolks in a small bowl. Gradually stir in the hot mixture.
  6. Return the mixture to the saucepan and cook over low heat for 2 minutes, stirring constantly. Remove from heat.
  7. Stir in the butter until melted. Allow to cool.
  8. Spread the cooled mixture evenly over the pastry.
  9. Peel and slice the mangoes. Arrange the mango slices on top of the filling.
  10. Bake in the preheated oven for 20 minutes, or until the crust is golden brown.
  11. Allow the tart to cool for 1 hour.
  12. Serve with whipped cream and garnish with mint leaves.
