  2. Remove the stems from the portabella mushrooms and set aside.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the garlic and cook until fragrant.
  4. Add the spinach and cook until wilted. Remove from heat.
  5. In a bowl, combine the spinach, feta cheese, sun-dried tomatoes, breadcrumbs, salt, and black pepper.
  6. Stuff the portabella mushrooms with the spinach mixture.
  7. Place the stuffed mushrooms on a baking sheet and drizzle with the remaining olive oil.
  8. Bake for 20-25 minutes, or until the mushrooms are tender.
  9. Remove from the oven and let rest for 5 minutes before serving.
