Major’s stuffed portabellas
Portabella mushrooms are actually mature cremini mushrooms and have a meaty texture and rich flavor.
This is vegetarian, gluten free and high protein recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 9.

Preheat the oven to 375°F (190°C).

Remove the stems from the portabella mushrooms and set aside.

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the garlic and cook until fragrant.

Add the spinach and cook until wilted. Remove from heat.

In a bowl, combine the spinach, feta cheese, sun-dried tomatoes, breadcrumbs, salt, and black pepper.

Stuff the portabella mushrooms with the spinach mixture.

Place the stuffed mushrooms on a baking sheet and drizzle with the remaining olive oil.

Bake for 20-25 minutes, or until the mushrooms are tender.

Remove from the oven and let rest for 5 minutes before serving.
