Lite Stuffed Mushrooms
Mushrooms are a great source of umami flavor and are low in calories, making them a healthy choice for stuffing.
This is vegetarian, gluten free and low carb recipe. Dish can be prepared in 40 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Preheat the oven to 375°F (190°C).

Remove the stems from the mushrooms and set aside.

Heat olive oil in a pan over medium heat. Add chopped onion and minced garlic. Cook until onion is translucent.

Add spinach and cook until wilted. Remove from heat.

In a bowl, crumble feta cheese and mix with breadcrumbs, salt, black pepper, and chopped parsley.

Add the cooked spinach mixture to the feta cheese mixture and combine well.

Stuff the mushroom caps with the mixture and place them on a baking sheet.

Bake for 15-20 minutes until the mushrooms are tender and the stuffing is golden brown.

Allow the stuffed mushrooms to rest for 5 minutes before serving.
