  1. In a bowl, combine the all-purpose flour and ground almonds. Set aside.
  2. In a separate large bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy.
  3. Add the egg yolks, vanilla extract, lemon zest, and salt to the butter-sugar mixture. Mix well.
  4. Gradually add the flour-almond mixture to the wet ingredients. Mix until the dough comes together.
  5. Divide the dough into two equal portions. Shape each portion into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  6. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  7. Roll out one portion of the chilled dough on a lightly floured surface to about 1/8-inch thickness. Cut out round shapes using a cookie cutter.
  8. Place the cut-out dough rounds on the prepared baking sheet. Spoon a small amount of raspberry jam onto the center of each round.
  9. Roll out the second portion of the chilled dough and cut out round shapes.
  10. Use a knife or a cookie cutter with a decorative shape to create a lattice pattern on the dough rounds. Place the lattice dough rounds on top of the jam-covered rounds.
  11. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown.
  12. Allow the Linzertorte cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
