In a large bowl, cream together the butter and granulated sugar until light and fluffy.

Beat in the egg, lime zest, lime juice, and vanilla extract.

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Divide the dough in half and shape each half into a log. Wrap in plastic wrap and refrigerate for at least 30 minutes.

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Slice the dough logs into 1/4-inch thick rounds and place on the prepared baking sheet.

Bake for 8-10 minutes, or until the edges are lightly golden.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Once cooled, spread powdered sugar on the bottom side of half the cookies and sandwich them together with the remaining cookies.
