French onion soup is believed to have originated in the 18th century and was popularized in the United States in the 1960s.

Heat olive oil and butter in a large pot over medium heat.

Add sliced onions and cook until caramelized, stirring occasionally for about 30 minutes.

Add minced garlic, thyme sprigs, and bay leaves. Cook for another 5 minutes.

Pour in white wine and simmer until reduced.

Add vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.

Ladle the soup into oven-safe bowls. Top each bowl with a slice of baguette and sprinkle with grated Gruyere cheese.
