  1. Preheat the oven to 350°F (175°C). Grease and flour mini loaf pans.
  2. In a large bowl, combine the flour, sugar, baking powder, and salt.
  3. In a separate bowl, beat the egg. Add the oil, mandarin oranges, cranberries, orange zest, orange juice, and vanilla extract. Mix well.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Divide the batter evenly among the mini loaf pans.
  6. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
