In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg, lemon zest, and lemon juice.

Roll the dough into 1-inch balls and place them on the prepared baking sheets. Flatten each ball slightly with the bottom of a glass.

Spread a teaspoon of lemon marmalade onto the bottom of one cookie and sandwich it with another cookie.
